Dapur Bora began in 2022 as one small kitchen in Gading Serpong. Today it runs four brands across two outlets, still out of the same kitchen.

Michelle Debora is both the head chef and the owner. She is an Apca Indonesia alumna, and she still works the wok herself rather than running things from behind it.
What sets the menu apart is the spice. Andaliman from North Sumatra, torch ginger, se'i smoked beef from East Nusa Tenggara, and the Madura black spice paste behind the Bumbu Ireng chicken and duck. Everything is cooked to order, one wok at a time.
The Alam Sutera outlet closes earlier than Gading Serpong because every afternoon that kitchen turns over to Big T Banquet catering production. The same kitchen, on its second shift.
Street-style fried rice, noodles and kwetiauw
The flagship of Dapur Bora. Fried rice, noodles, vermicelli and kwetiauw cooked to order one wok at a time — from the plainest Jawa to spices you rarely find on a street menu, like andaliman and torch ginger.
Madura black-spice chicken and duck
Chicken and duck cooked in the black spice paste of Madura, served complete with rice, tofu and tempeh, sambal and fresh vegetables.
Daily, weekly and monthly catering
Big T Banquet in partnership with Dapur Bora, cooking daily catering for Alam Sutera, Gading Serpong and BSD. The same kitchen, on its second shift.
